These sweet little cakes delight, either on their own or accompanying a birthday cake. For very young children, consider exchanging the peppermint candy with soft gumdrops.

1/2 c. unsalted butter

1/4 lb. unsweetened chocolate

2 large eggs

1/2 c. dark brown sugar

1/2 c. sugar

1 1/2 tsp. pure vanilla extract

1/2 tsp. salt

1/2 c. all-purpose flour

1/4 c. cocoa powder

8 marshmallows

2. Make the brownies: Preheat oven to 325 degrees F. Lightly coat 8 cups of a 12-cup muffin tin with butter, dust with flour, and set aside. Melt the butter and chocolate in a bowl set over a pot of gently simmering water. Remove from heat and set aside. Whisk eggs and sugars together in a large bowl until combined. Stir in the vanilla and salt. Add the chocolate mixture and stir until just combined. Add the flour and cocoa and stir until just combined. Spoon 1/4 cup batter into each muffin cup and bake for 25 minutes. Lightly press a marshmallow in the center of each brownie and bake for 5 more minutes. Transfer muffin pans to a wire rack and allow brownies to cool completely.
3. Assemble the brownies: Release brownies from pans and set aside. Fill a pastry bag, fitted with a number 3 star tip, with the colored Circus Tent Frosting and pipe from the base of the brownie across the top of the marshmallow. Repeat two times, piping frosting in crossing diagonal lines. Fill a second bag with the same tip with the uncolored Circus Tent Frosting and pipe between the colored piping lines to create a striped effect. Top each brownie with a piece of peppermint candy.
